Fort Worth's Veldhuizen Cheese Factory Tour

Twenty-seven folks in 15 cars joined us for a country drive, lunch at the original (and we think the best) Hard 8 Barbecue in Stephenville, and a tour of the Veldhuizen Cheese Factory in Dublin.

We began our cheese experience by sampling easily more than a dozen types of premium, delicious cheese, some we have never tasted before.  After our cheese tasting, cheesemaker Stuart Veldhuizen went through the highlights of the cheese-making process and explained the equipment in the cheese room.  We then took a short walk to the cheese-aging cave, where Stuart pointed out the types and ages of the various cheeses in the cave.  Next was the blue cheese aging room, literally made of paper and some Portland cement to efficiently maintain a constant 50-degree temperature inside despite the Texas heat. We also saw and petted the baby calves that will eventually become productive members of the dairy herd.  Next,  Stuart showed us the parlor where the cows and sheep are milked.  Back at the cheese store, we purchased cheeses to take home.  Many, if not everyone, bought some cheese, cut to order and as fresh as can be.

Still full of that great Hard 8 Texas BBQ and cheese samples, we set up our lawn chairs, relaxed, and enjoyed some wine and camaraderie.  Of course, more cheese samples complemented the wine.  After the social, we drove back home on our own.
